But there are reasons to change it, like configuring local delivery
through LMTP to Cyrus or another mail-store like that.

Well, yeah.  That's a general problem with Sendmail.  As long as I
used it, I could never exactly find canonical ways of doing certain
things, like even rebuilding the config file.  If you look at docs
on the Internet, you'll find three or so different ways of doing it.
