eth0 /eth1 confusion

Hi, thanks for reading..
I set up a firewall last week.. All was working until one of the NICs
stopped responding. I thought I had traced the problem to a bad NIC,
but now with a new NIC this problem presents itself.
If both NICs are connected to the same hub (with my gateway as well) I
am able to use ipchains normally. When I sperate the networks things
start to go hay-wire, and I noticed this odity...
Note: this with my ipchains set to ACCEPT.
from ifconfig...
eth0 inet addr:192.168.77.210
eth1 inet addr:192.168.79.30
from netstat -r... note the default eth1 and gateway

a default ping.. note the from address indicates a ping from eth0. No
contact via eth0 is consistant with my physical network.
PING 192.168.72.1 (192.168.72.1) from 192.168.77.210 : 56(84) bytes of data.
From 192.168.77.210: Destination Host Unreachable
a ping off eth1 using the -I eth1 flag... ahh.. contact!
PING 192.168.72.1 (192.168.72.1) from 192.168.79.30 eth1: 56(84) bytes
of data.
64 bytes from 192.168.72.1: icmp_seq=0 ttl=255 time=7.817 msec
Why is my eth1 listed as my default but my default pings seem to
originate at eth0?
I've been using /etc/sysconfig/network to set my GATEWAYDEV="eth1"
I've also tried GATEWAY="192.168.72.1"
