Ah, but you see we GNOME hackers have been putting a lot of effort into
making our applications support gnome-vfs which can handle ssh/sftp.
As John pointed out, it's as easy as "Places->Connect to Server"; and
once you've done that you can access it from applications like GEdit.
But not only that - even better for many cases is gnome-user-share:

We really need to get this into Extras.
All you do is drop files you want accessible publicly into your ~/Public
folder, and everyone else on the local area network can see them when
you go to "Computer->Network". No need to know about IP addresses, ssh,
servers, etc. Now if you're not on the same local network it won't
work, but if you are it can replace ssh/sftp/ftp in a much much better
way.
