Advanced tar question

Hi,
How can I pass a *list* of excluded *directories* to tar? Would it be
delimited by whitespace, comma, quoted or what? I'll ultimately want to
create this list as a variable.
I also want to preserve existing ownership and permissions.
I'm using the following command at this point, but I can't find anything in
man tar about excluding more than one pattern...or did I miss something?
[charles moe charles]$ tar cvCfz /home/charles /tmp/my_home_dir.tgz .
- --exclude /home/charles/.giFT/
- --
