Why use "su -" rather than "su"

One day the novice programmer came to the master programmer,
and said "I have a problem." The master programmer asked
"What is your problem?" The novice programmer replied "I have
many many editors, each of which has many powerful commands,
but no one editor can do all that I need in order to do
my job. I find that I am constantly exiting one editor, and
starting another." The master programmer asked "What do
you propose to do about this?" The novice programmer thought
for a moment, then replied "I shall write a new editor. It
will have all the good features of every editor I use now,
plus any new features that occur to me as I am writing it.
Then we may all use the new editor to do our jobs."
The master programmer folded his fan and hit the novice
programmer on the head, very violently. "I DON'T WANT TO
LEARN A NEW EDITOR!" he shouted forcefully.
