Please, in the interests of solid default security. It is fairly trivial 
for the user to just install sendmail, and anybody who should be USING 
sendmail (managing security, etc) should definitely be able to do that. 
They're going to need to update it fairly frequently after all :-P

Switching from sendmail to postfix strikes me as wise for the same 
reason RH ships with a firewall on by default. Both can cause occasional 
issues or breakage, neither are perfect, but both do significantly 
improve out-of-the-box security while allowing users to easily 
alter/remove them if needed.
