Order matters: yum [option] command [packagename]


[option]: --exclude=rhythmbox --exclude=nautilus-media --exclude=gnome-media

command : update

so

yum --exclude=rhythmbox --exclude=nautilus-media --exclude=gnome-media update

will work better for you
