	Untested, but it should give you the idea:

$> gconftool-2 -s -t string /apps/panel/profiles/default/objects/main_menu/custom_icon $myicon
$> gconftool-2 -s -t bool /apps/panel/profiles/default/objects/main_menu/use_custom_icon true
