Errmmmm ... Evolution is *part* of GNOME. It became part of the core
GNOME desktop with Evolution 2.0 and GNOME 2.8. You can't ship GNOME
without Evolution.

Frankly the rest of your suggestions (e.g.dumping OOo , Apache, PHP,
etc.) are too ridiculous to bother responding to.
