I do almost the same thing, but I use virsh to undefine the default
network completely, when I install a vm, it just automatically
offers br0 as the only choice for network. Here's my ifcfg-br0 and
ifcfg-eth0 files (I use a static IP):

GATEWAY=192.168.1.1
IPADDR=192.168.1.106
