One big problem I can see right off the bat is your IP address. You
should not be using 192.168.1.0 with a netmask of 255.255.255.0.
192.168.1.0 is you network address, and should not be used for specific
machine! Try using 192.168.1.1 instead, and set that as your gateway
for your Windows machines.
After you take care of that, you will probably want to read the
IP-Masquerade-HOWTO. You have to set up firewall rules to have your
Linux box masquerade the connections between the Windows machines, and
the Internet. You also need to turn on IP forwarding on the Linux
machine.
