[K12OSN] Kernel Kraziness

Since upgrading with k12 3.1.2 I have done yum update twice.
Both times it has downloaded new kernels, as far as I can tell.
Now, when I reboot, Lilo gives me a menu of kernels to which I may boot,
including "Kernel Bigmen" and a few others (I think there are about 6 or
7 options..It doesn't stay on long enough for me to write them all down
and my memory is gone to the birds in my old age here).
I am guessing that yum brought these other kernels in but did not
install them in the default kernel directory, so that I have the option
of choosing these others, but so that it is booting to the kernel that
came with the 3.1.2 isos I downloaded (2.4.24 I think, maybe 2.4.20 ?).
Am I right?
I am confused, really, about this menu of kernels.
How can I narrow these options back to the latest, current, updated kernel?
Should I keep the one it's been running just to be sure I can back-up if
the newer kernel gives me problems? Do I need to recompile the kernel or
something? If so, how is that done? What's a "Kernel Bigmen"? Why is
the sky blue? Does Santa really smoke a pipe? Doesn't he know smoking
is bad for you?
