At the moment I'd go for the XEON, there are plenty of people using
these at the moment, unless you like being on the bleeding edge, in
which case go for the opteron, but likely you'll be one of the first
using it with K12.

Plenty of RAM as usual, you probably won't need both CPU's just yet, the
SCSI is a definate must.

Personally I'd go with a ready built server, depending where you are

penguincomputers would probably be a good bet.
