Check out Yellowdog Linux, they work the hardest to support all the
various apple hardware.

YellowDog also sells Apple hardware with Linux preinstalled.
I've found a good tool is http://www.linuxiso.org It lets you search
for different types of Linux for your processor type. The xServe is
a PPC chip so search by PPC.
PPC chip also supports Mandrake, Gentoo, Debian and others.
