Personally, I wouldn't use them as thin clients for this purpose.
Apple's X-server works very well. I would investigate using this
software within OS X and making them fat clients instead. There are
others on the list who are using Macs as thin clients though, so I know
it is possible, I just wonder if it's the best solution since these
machines won't be permanently attached to the network.
It would also be a good demonstration of the strength of
interoperability of FOSS, since it would seem to seamless to the users.
