Somewhere in the disk setup dialog there should be a checkbox
for whether to format each partition or not. If don't format
you keep the old contents. Or you can just avoid the partition
completely in the install and edit it into /etc/fstab to mount
it later. If you keep something like /home from a different
version you may have to juggle the bits and pieces that new
installs put there.
