I recently installed WBEL in a hurry (the only installable CD set to hand and alternatives were on the broken server). Like you, I didn't want X, but I did want other stuff such as mail. Here's the package list Anaconda produced:
packages
@ legacy-network-server

@ server-cfg
@ dialup
@ system-tools
@ network-server
@ sql-server
@ editors
@ admin-tools
@ smb-server
@ printing
kernel
grub
e2fsprogs


I've added stuff since then so I can't say how big it came out, but clearly there's room for cutting back on that.

Bear in mind in the ks file you can have an entry
-sendmail
to eliminate sendmail (but probably you should ensure exim or postfix goes in).
