Based on model name, speed and cache size, you probably have either SL7PF or
SL7DX processor. Both of which have EM64T. The SL7PF and SL7DX are sSpec
numbers. sSpec number is the only way to identify exactly what Intel CPU you
have. It is printed on the CPU itself (if you don't have any papers or specs
from Dell telling which CPU is inside, you'll have to remove heatsink to read
it directly from the CPU).
If your processor is neither SL7PF or SL7DX, check
http://indigo.intel.com/compare_cpu/default.aspx?familyID=5&culture=en-US to
select the correct one.
Anyhow, if you already have the server sitting on your desk (or in your rack),
you can try booting the x86_64 install CD or DVD. If it boots and doesn't
complain, you have the right stuff. Simple test that always works.
