I'm not entirely sure what your end goal is, but if you're trying to use
the kernel spec file to recompile a kernel, then you don't need to do
anything with the patches.  RPM will parse the spec file and apply those
patches in the order listed before attempting to compile the kernel
code.  If you've made changes to the existing patches, then all should
still be well with the patch application.  If there are additional
patches you wish to apply to the kernel then you will need to copy those
patches into the correct location (/usr/src/redhat/SOURCES) as well as
modify the spec file to apply the patch in question during build.

Google for "RPM tutorial" and pick the one you like the most.  There are
tons of sites which detail how to interact with RPM.  There's even a
book, albeit a little dated, pertaining to the subject.  Most all of the
concepts are still the same, we've just added quite a few flags and some
more advanced logic since the book was written
