Brandon,
You don't need a real wiz-bang server to get started. I run LTSP for a library with 7 workstations on nothing more then an old desktop PII 450 with 370Mb ram. Provides Web surfing and Word Processing to the public and works fine.
There is also a thing in LTSP for running applications locally (aka on the workstation), which will reduce the load on the server.
