While you're there playing with the guts of the kernel, you should
probably go the whole nine yards and remove the stuff you don't need.
This isn't too bad if you use xconfig since there is a little info on what
each thing does and what you probably will and won't need (from the box
your kernel supports everything from ethernet support to TI mouse
support - all this bulk slows ya down)  

The "official" RedHat user's manual has got a very good section on kernel
safety (step by step tells you how to have the option of booting the new
kernel or the old kernel). You can get the user's manual from the ftp site
at RedHat.
