Of course, and only one NIC is neccessary.
However, while you could assign every site its own IP,
you may not wish to, and may not have to.
Apache supports classless virtual servers.
That is, you can setup foo.com and bar.com on the same IP.
Apache will serve the right pages to the right name. The
only problem with this approach is that it doesn't scale
to FTP sites and reverse DNS will always show the same
name for all those "sites".
