sendmail is needed if you ever plan on mailing anyone or getting
mail locally. I suggest _not_ turning it off, actually.
I do so mostly because sendmail isn't actually your problem at all.
Your DNS is screwed up, and sendmail is simply complaining about it.
This will, in all likelyhood, simply go away if you fix the DHCP.

"RedHat Package Manager", actually.

Yes, "rpm". "man rpm" will explain, but "rpm -i" is for installing.
"rpm -U" is for upgrading.

I wish I could help, but I've never setup a DHCP client system.
You might try reading the HOWTO on this, or perhaps someone else
here knows more about that.
