All I have really is /, /boot, /home, and /var. The reason for each is as
follows:
/boot (helps overcome the 1024 limit. Yes, I know the new LILO fixes this)
/ (self explanatory)
/home (second drive just for home directories)
/var (set this up as 150M partition for logs and such)
With that arrangement, I have not ran out of space on a partition.

I've heard that, but never experienced it.
What I have experienced, again and again, is partitions filling up. My next
install is going to have /, /home, and swap. When that quits working for
*ME*, I'll consider going back to a more sophisticated arrangement.
