Starting server

Hello..
I want to know what do i have to do to install a Linux server with only a
few things..

DNS Server
Mail Server (Sendmail or qmail)
FTP
HTTP

I have the linuz Redhat 6.1 and 6.2... i want to know...
First.. Which version is best for my needs.. what are there diferences????
What options do i have to check or uncheck to do this...

I ask this because i have a linux server running but is has some programs
running that i dont need.. how can i uninstall it...
