Outlook _can_ use standard POP3, IMAP, and SMTP servers.

Exchange Server additional domain services beyond those required
for domain members. While NT supports these, the Samba Team has
not yet been able to decipher and implement all of these in Samba.
Thus, no current Samba release supports Exchange. Samba TNG, a
newer project deidcated more to implementing MS DCE/RPC services
in general, may support this, but that is just a rumor.
Personally, I would not run Exchange for a variety of reasons
unrelated to Samba vs. NT. IMO, Exchange is really lousy choice
of mail server under the best of circumstances.
