It could be that the installer is running VGA16 settings, which is really
low color and usually pretty lo-res when used.
Can't say for sure because I never use the graphic installer. But, such
things wouldn't surprise me since that's how the graphic setup program
XF86Setup used to do it. (That's been replaced BTW.)
