I guess you're using Sendmail?  If so that's probably not the best choice
for someone setting up their first mail server.  I'd suggest Postfix
(http://www.postfix.org) instead.  If you venture there, look through the
documentation section.. complete and excellent documentation.

For smtp relaying filtering you might want to look at pop-before-smtp.
