I found postfix to be much easier to set up and more secure. I found
exim much, much easier to set up. I don't know how secure it is, but I
don't think it has a bad track record.
Exim is basically follow the instructions about running th configure
program, answer some questions and you're done.
Redhat has/had a good page that showed how to configure postfix. It has
a lot of details you might not need, but it was relatively easy to
follow, and it worked right the second time (the first time I missed one
option).
Nothing is more confusing than sendmail, except to those that have
learned all about it already. It also gets hit with exploits sometimes,
possibly because it gets used so much. I haven't heard of an exploit on
either of the other 2.
