I have been a Mac user only since OS (Unix Based) 10.1 and 10.2 can do a
connection to a LINUX or SMB printer using ip Address
File sharing can be done with SMB or Appletalk. You can configure both on
LINUX boxes.
On a Mac OS X Server you can run most BSD supported programs, Comew with
NFS Mount Point, Apache, Samba file and print sharing. Seems much more
reliable (for me, pls no flames from Windows Supporters) than IIS and 2000.
Matches Linux configurations for reliablity. Is simpler to install, but
costs much more.
I currently run
3 Redhat 7.3 Systems with vmWare, SMB apache and tomcat installed, one with
Appletalk
Eserver 2.3 (from Caldera) with Apache, mySQL and Tomcat installed
OS X Server with Appletalk, Samba, Apache, Tomcat mySQL
1 NT 4.0 with IIS SQL Server and Coldfusion SLMail
2 Win2k Professional Servers with IIS
All have JAVA and PHP, All UNIX based are running Sendmail and Webmin
I use VNC Server and Cleint on all
Here is what I personally experience.

All behave slightly differently and have different interfaces. There is
startup learning curve for each, like like programming languages, the 2nd
one is the hardest to learn. After you get over the first love bias, the
3rd 4th and 5th systems are easy.
I DO NOT USE CHEAP HARDWARE and I DO NOT DUAL BOOT
Both cause me many more headaches than I can handle. I want to spend my
time making money and learning. Finding obscure drivers and fixing boot
loader problems do neither for me.
