Need to move an install from a working machine

I need to move a working install of RH7.3 to another machine. I know
that it would probably be easier to back up my settings and migrate
over, but this needs to be done in the space of three hours, and I have
no room for testing. The plan I came up with, was as follows:
To install a minimal version on Linux onto another machine, I'll hunt
around on the net for one later, that supports NFS.
I would then create three partitions on the target machine, one for swap
space, on for the minimal Linux, and one for system being moved.
Once the minimal system is installed, I would mount the target partition
a share it on the network via NFS.
I would then mount this share on the target machine, and copy EVERYTHING
across... *not from the root directory, each directory, one by one,
because the mount point for NFS would be off the root directory*
I would then boot up with a rescue disk, and configure grub, the
friendly boot loader, to load up the freshly copied version of Linux.
It sounds easy, and seems to have a time scale of less than three hours,
but if anyone can spot any gotchas in this, please let me know!!
Oh, and before someone says why don't you swap the hard drives, there
are two reasons, One, machine A is SCSI, and machine B is EIDE - and two
- I haven't seen these machines before, they could still be under
warranty, and I may not be allowed to open them, or any number of
things.
