Thanks everyone for your suggestions!
It turns out to have been a motherboard problem. I have a Tyan 1837 Thunder board and, while in
99% of all situations (everything except for the GRUB loader kernel prompt) the USB kb works just
fine, it required a BIOS setting on the mb to be set:
Legacy USB Support = 'Keyboard + Mouse'
It works just fine now. Don't know why it needed to be set when it worked before without it being
set, but there you have it....
