I'm afraid I missed most of this thread, so I'm not sure what your problem is.
/etc/mtab is a non-essential file. It get's rewritten during every boot-up.
If your filesystems are not clean, then boot into single user mode and run
fsck on them. Send me e-mail directly if you still need help.
