Nothing.
If the other end is 100 MBS capable, the NIC runs at that speed: no user
configuration required.
I have two machines wired together with UTP plugged into a pair of SMC
EtherPower 10/100 NICs. The first time I copied data between machines, it
finished almost instantaneously. Then I had to wait for my disk drive (a
Fujitsu M2513A MO drive) to record it all.
