One thing I just installed on my new server (VA Research, very cool) is
the strobe patch. I tested it. It works nicely. It protects against
most stealth scans as well as generic port scanning (unforetunately it
doesn't protected against a XMAS tree scan like you can do in nmap).
Anyways the perp, instead of getting a list of ports gets nada, an you get
a nice little notice saying who was port scanning you.
