You'll find most of the work needs to be done in the /etc/sysconfig
directory. Check out the following files and change whatever you need:
/etc/resolv.conf
/etc/HOSTNAME
/etc/sysconfig/network
/etc/sysconfig/network-scripts/ifcfg-eth0
/etc/sysconfig/sendmail
/etc/mail/*
/etc/hosts
I may have forgotten something, so I hope other people can correct me.
