You didn't read very thoroughly:
linux:~>tar --h | grep z
--ignore-failed-read do not exit with nonzero on unreadable files
--record-size=SIZE SIZE bytes per record, multiple of 512
-i, --ignore-zeros ignore zeroed blocks in archive (means EOF
-I, --bzip2 filter the archive through bzip2
-z, --gzip, --ungzip filter the archive through gzip
-Z, --compress, --uncompress filter the archive through compress
