When setting up Squirrel Mail you have the option to use the local sendmail 
or a smtp server, you should be able to run as many different copies of 
Squirrel Mail as you like. I assume you are using Squirrel Mail to open a 
remote IMAP session? If so check out the Squirrel Mail FAQ for speed issues 
as it can run rather slow, they have suggestions to speed it up.
