Add something like SpamAssassin or Vipul's Razor to your mail system
Add checks against the DNSBLs. If you don't do mail business with China,
use the chine blackhole to throw mail from there away etc.
I do this with postfix, and it works wonders. I'm now looking at adding the
capability for users to manipulate their personal spamassassin rules (it can
do SQL lookups), and add a quarantine dir for spam via amavisd-new.
