Custom Kernel Build

I am using a RH 7.2 distro on my server. I'd like to rebuild the kernel from
sources but want to ensure that my starting point for kernel configuration
options matches the options used by RH to configure the stock kernel.
1) Are kernel source RPMs for my distro included with the distro?
2) How do I make sure that my config options match those used by RH?
3) If I decide to download fresh kernel sources and not use those provided by
RH, again how do I make sure that my config options match those used by
RH?
