Sendmail

I would like to use my Redhat system to its fullest. I would like to
set up a mailserver using sendmail. I'm kinda fuzzy on this picture and
need some help. I think I have sendmail configured properly but what do
I use to receive incoming mail from my ISP? (Currently my mail client
just goes directly to my ISP's mail server.) Is that where fetchmail
comes in? I would like to point my mail client to my mailserver
instead.
I also want to bypass my ISP all together when I send mail. What do I
use to do that? Is that sendmail's function?
The reason for doing this is I hope to move my website to my home system
and have to have a mailserver. I'm just trying to save some money I'm
give the hosting company.
