You could peek inside the setup*rpm and see. This is what I have:

$ cat /etc/passwd |sort |grep ^p|sed s/:.*//
pcap
postfix
postgres
privoxy

But not sure that is the *default set* of users per se. I think all of
those are the result of specific package installations, all (or most?)
of which are not required packages. So YMMV ;-)
