changing that 'redhat' icon

Hey,

I'm using GNOME on Redhat 8 and I want to use a differnt icon for the 
'start' button.  Does anyone know where I can change it?  I can easilly 
right-click on all the other icons and apply a custom icon, but the 
option just isn't present for the menu.

And while we're on the same topic, how can I change the trash icon?  I 
have two separate icons for when the trash is full/empty but how can I 
configure it.

btw, I search on google for how to change the start button icon but came 
up empty..  sorry if this topic is discussed often.
