The minimum requirements are documented online.  Of course, this depends
on what you're all doing to the server - you may actually need more than
the minimum.

You're asking the wrong list.  :-)
Each distribution has its own strenghts and weaknesses and "better" is
relative to exactly what you're trying to accomplish.
