NewBie: emulation of console systems in redhat 9 / building rpm from source file

I'm looking for an emulator for NES, SNES and GameBoy
to emulate a couple of games that I have bought over
the games and in my opinion its just a whole lot more
convinient using an emulator then finding the proper
cables and such to get the consoles working.
I was hoping that someone can recommend an emulator
for these systems, preferably ones with an rpm so that
they can be easily uninstalled later.
But if not as a newbie I've tried to build an rpm with
a source file and I'm having some trouble. The
information I find seems not to work with version 9 so
I was hoping that someone could tell me the command to
use and I keep hearing I need .spec file and some
other stuff..
