Yes, this is the proper way to do it (as you state).

The smart_host option configures sendmail to send (relay) all outbound
e-mail (actually all non-local e-mail) to the defined mail server instead of
sendmail trying to deliver the e-mail itself using DNS/MX records.

Yes, have a look at fetchmail. (man fetchmail)

To automate this process, configure a cronjob. (man 5 crontab)
