redhat-config-packages has the ability to do individual packages now. 
The installer gets you to a working system, you can tweak to your
heart's content afterwards.

It's *FAR* easier to add new functionality that can be used post-install
because then you don't have to worry with the absolutely wacky
environment that the installer runs in.  This doesn't apply just to
packages -- it applies equally well to everything.
