Why did you title your post "Mozilla configuration" when it's a question 
about Ximian Evolution??

As far as the question you actually asked is concerned, to use Evolution 
to connect to your exchange server, you'll need to buy a commercial and 
non-free software package from Ximian called "ximian exchange connector"
