Close, but no cigar. ;)

Just put the following into ~/.rpmmacros (create it if it doesn't exist):

%_topdir	/path/to/users/redhat

Then recreate the directory structure below /usr/src/redhat under
/path/to/users/redhat.  Now you're all set. You might also set %_tmppath
to somethere else, depending on what you build /var/tmp may have not
enough space.
