Your question is not clear.  RPM doesn't apply patches.

You can install a 1.0 RPM, upgrade to a 1.1 RPM, then downgrade back
to the 1.0 RPM, in general.  There may be dependency requirements that
prevent you from downgrading, but in general this works.
